This parsley (perejil) has grown well in our worst soil, which we bought a truckload of, and turned out to be nearly solid clay. Few things would grow well in it because of the lack of drainage.

Parsley is a superfood, with very high levels of phytochemicals and other nutrients. It has a strong taste and is traditionally put on a plate and ignored. When I go to restaurants in the US I often eat everyone else’s parsley garnish. It has the side benefit of freshening your breath.

If you’re into green juicing, and you should be, put in lots of parsley, but only an auger-style juicer will wring any liquid out of it.
