Cilantro Purslane Pesto
Cilantro/Purslane Pesto to try
Ingredients

1 cup cilantro
1 cup purslane leaves and small stems
1/2 cup olive oil
1/4 cup cashew nuts
1/4 cup sunflower seeds
5 cloves garlic, minced
1 tablespoon vinegar
1 teaspoon lemon juice
1/2 teaspoon cayenne pepper or minced spicy peppers
salt and pepper to taste
Try adding the olive oil slowly, until you get the desired texture. It may not need the full amount, or you can substitute with a bit of water to keep the cost down.
