Estrellita, Our Baby Goat
We are thrilled to announce the birth of “Estrellita” (Little Star in Spanish) yesterday morning around 5-6am! Her mother, named Cosita Buena (Little Good Thing) is now happily feeding her, and we are doubly excited because this means that after the baby has grown up, we’ll finally have some fresh goat milk for Anamaya since her mother will keep producing for us if we continue to milk her.
With fresh goat milk, we’ll be able to make goat cheese! Soft goat cheese is relatively easy to make. Add a few ingredients and put it through a cloth to separate the curds from the weigh, and then add a few herbs from the garden and “voila”… soft spreadable goat cheese.
We are told that if we don’t separate the daddy goat “Billy Boy” from the milking goat, the milk she produces will be stronger and gamy, so we’ll have to build an extra pen for him. He’s not going to be happy about that.
Anyway, Estrellita is incredibly cute and friendly. She was walking after a couple of hours, and likes to be held and cuddled. Her mom has no problem with her baby being handled, as she’s very trusting of us.
