Fresh Coconut Milk + Coconut Flakes
If you are using coconuts fresh from the tree, you will need to hack away the outer layer with a machete or meat cleaver until you reach the hard shell of the coconut. Hammer a screwdriver into the shell and pour the coconut water through a strainer. Save the water and split the coconut in half, then scrape the meat out with a butter knife and rinse. Blend coconut meat and water on low for 10 minutes and strain through cheese cloth. Milk will keep for 1 or 2 days.
The leftover coconut meal can be dehydrated to make coconut flakes.
