When my turn came up in the rotation this week, I decided to try to recreate a favorite of mine from an internship that I did on another farm in Costa Rica last year \u2013 Cauliflower Cheese Pie, or Tarta de Coliflor y Queso. Although we often made it with a wheat crust, we also had a gluten-free version that used shredded yuca, a local and readily available root vegetable. With only minimal searching, I found nearly the exact recipe that I was looking for online. Here is my adaptation of The New Moosewood Cookbook\u2019s \u201cCauliflower Cheese Pie\u201d:<\/p>\n<p style=\"text-align: center\"><a href=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-420.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1004  aligncenter\" alt=\"Montezuma 420\" src=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-420-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-420-300x225.jpg 300w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-420-650x488.jpg 650w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-420-600x450.jpg 600w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-420.jpg 2048w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>Crust<\/strong><\/p>\n<p><strong><a href=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-418.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright  wp-image-1005\" alt=\"Montezuma 418\" src=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-418-300x225.jpg\" width=\"108\" height=\"81\" srcset=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-418-300x225.jpg 300w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-418-650x488.jpg 650w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-418.jpg 2048w\" sizes=\"auto, (max-width: 108px) 100vw, 108px\" \/><\/a><\/strong><\/p>\n<p>2 c grated raw yuca (remove the outer brown and red layers and the stringy part down the center before grating)<\/p>\n<p>\u00bd t sea salt<\/p>\n<p>1 egg white, beaten<\/p>\n<p>\u00bc c grated onion<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Filling<\/strong><\/p>\n<p>1 T olive oil<\/p>\n<p>1 c diced green onion<\/p>\n<p>3 cloves garlic, minced<\/p>\n<p>\u00bd t sea salt<\/p>\n<p>Freshly ground black pepper (to taste)<\/p>\n<p>\u00bc t dried thyme<\/p>\n<p>1 t dried basil<\/p>\n<p>1 head cauliflower, broken into florets<\/p>\n<p>1 large tomato, deseeded and diced<\/p>\n<p>1 c grated cheese*<\/p>\n<p>2 eggs<\/p>\n<p>\u00bc c milk<\/p>\n<p>*The cheese you use will have a big impact on the overall taste. \u00a0I used the white semi-soft cow cheese that is easily available in the local markets. \u00a0I&#8217;ve also had it made with fresh goat cheese, which is quite nice. \u00a0The original recipe calls for grated cheddar. \u00a0Your choice.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Instructions<\/strong><\/p>\n<p>1) Preheat the oven to 400\u00b0F and <em>generously<\/em> oil a 9\u2033 pie dish.<\/p>\n<p>2) Place the grated yuca in a colander and toss with the salt. Wait ten minutes, and then squeeze out the excess water. Stir together the yuca, egg white and onion in a large bowl, then press the mixture evenly into the pie dish, building it up the sides to form the crust.<\/p>\n<p>3) Bake for 30 minutes. Remove from oven and lower the temperature to 375\u00b0F.<\/p>\n<p>4) <a href=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-416.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright  wp-image-1006\" alt=\"Montezuma 416\" src=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-416-300x225.jpg\" width=\"192\" height=\"144\" srcset=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-416-300x225.jpg 300w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-416-650x488.jpg 650w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/06\/Montezuma-416.jpg 2048w\" sizes=\"auto, (max-width: 192px) 100vw, 192px\" \/><\/a>While the crust bakes, heat 1 T olive oil in a large saut\u00e9 pan over medium heat. Add the onion, garlic, salt, pepper and herbs and saut\u00e9 for about 5 minutes. Add the cauliflower and tomato and stir well to coat. Cover and continue cooking, stirring occasionally, until the cauliflower is tender, 8-10 minutes. Add a tablespoon of water if the cauliflower begins to stick to the pan.<\/p>\n<p>5) Spread half the cheese over the crust and spoon the cauliflower mixture over, and then sprinkle with the rest of the cheese. Whisk together the eggs and the milk, and then pour this mixture over the cauliflower cheese mixture.<\/p>\n<p>6) Bake 35-40 minutes.
