Cucumber – Yellow<\/p><\/div>\n

\"How<\/a>There are three main varieties of cucumber: slicing<\/i>, pickling and burpless and we grow 2 of the 3 here at Rancho Delicioso. The cucumber originated over 3,000 years ago in India but now grows on most Continents.\u00a0With enclosed seed and their development from a flower, botanically speaking, cucumbers are classified as a fruit,\u00a0though much like tomatoes and squash they are often also perceived, prepared and eaten as vegetables.\u00a0Cucumbers are usually more than 90% water so are a great way to fill your belly hydrating food, as most of the time when we think we are hungry it is really re-hydration that our bodies as asking for. Cucumbers are also a good source of potassium, phosphorus, magnesium, calcium, folate, and Vitamin K.<\/p>\n

Truth be told when these guys first cropped up on the farm I had no idea they were a type of cucumber, deceptive little guys. The flavor is more delicately sweet and less acidic than the common green cucumber. \u00a0Lemon cucumber skin has tiny bristles that are edible but may be easily removed.<\/p>\n
