The cucumber originated over 3,000 years ago in India but now grows on most Continents.\u00a0With enclosed seed and their development from a flower, botanically speaking, cucumbers are classified as a fruit,\u00a0though much like tomatoes and squash they are often also perceived, prepared and eaten as vegetables.\u00a0Cucumbers are usually more than 90% water so are a great way to fill your belly hydrating food, as most of the time when we think we are hungry it is really re-hydration that our bodies as asking for. Cucumbers are also a good source of potassium, phosphorus, magnesium, calcium, folate, and Vitamin K.<\/p>\n<p>Truth be told when these guys first cropped up on the farm I had no idea they were a type of cucumber, deceptive little guys.
