Remove veggies and res<a href=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/03\/soup-ingredients-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-738\" alt=\"Soup ingredients (lime, basil leaves, tarragon, garlic cloves, a sweet potato and a BIG ZUCCHINI\" src=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/03\/soup-ingredients-2-300x245.jpg\" width=\"300\" height=\"245\" srcset=\"https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/03\/soup-ingredients-2-300x245.jpg 300w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/03\/soup-ingredients-2-650x531.jpg 650w, https:\/\/ranchodelicioso.com\/wp-content\/uploads\/2013\/03\/soup-ingredients-2.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>erve to add back into the blender later.)<\/li>\n<li>1 large onion, slice thin<\/li>\n<li>3-4 zucchini, sliced (Farm)<\/li>\n<li>1-2 carrots, slice<\/li>\n<li>Stalk of lemongrass (optional) (Farm)<\/li>\n<li>4 cloves garlic, chop (Farm)<\/li>\n<li>1 tbsp ginger, chop<\/li>\n<li>Juice or one small lemon or lime (Farm?)<\/li>\n<li>Fresh basil (Farm)<\/li>\n<li>Few sprigs fresh tarragon (farm)<\/li>\n<li>1 small jalapeno pepper, diced (farm) or Tabasco sauce, to taste<\/li>\n<li>1\/2 can coconut milk (no additives!)<\/li>\n<li>Himalayan salt &amp; fresh ground papaya pepper, to taste<\/li>\n<\/ul>\n<p><strong>Recipe:<\/strong><\/p>\n<p>Cover onion, zucchini, carrots, garlic, ginger and lemongrass in broth and cook until soft. (Note, that big Cuban oregano leaf in the photograph, just beneath the basil, I didn&#8217;t end up using. But ya could.)\u00a0 Allow to cool. Puree in blender. My zucchinis cooked longer than necessary, releasing a lot of water of which I reserved about a cup that I never adding back in. Does that make sense? Add lemon or lime juice, basil, tarragon, jalapeno.\u00a0 Blend until smooth.\u00a0 Use coconut milk to adjust the amount of liquid to desired thickness. Blend again. I didn&#8217;t end up adding any additional salt or pepper aside from what I used in the broth.\u00a0 Serve warm or cold.
